Ingredients

  • 1.5 lbs (680g) Skirt or flank steak
  • 1/4 cup Lime juice
  • 1/4 cup Olive oil
  • 1/4 cup Cilantro, chopped
  • 4 cloves Garlic, minced
  • 1 Jalapeño, seeded and minced
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1.5 tsp Salt
  • 1/2 tsp Black pepper

Method

  1. Whisk lime juice, oil, cilantro, garlic, jalapeño, cumin, paprika, salt, and pepper into a marinade.
  2. Place steak in a zip bag with marinade; massage to coat. Marinate 1-4 hours in the fridge.
  3. Heat a grill or cast-iron pan to high. Remove steak from marinade and pat dry.
  4. Grill 3-4 minutes per side for medium-rare (internal 130°F).
  5. Rest 5-10 minutes, then slice thinly against the grain.
