Ingredients
- 1.5 lbs (680g) Skirt or flank steak
- 1/4 cup Lime juice
- 1/4 cup Olive oil
- 1/4 cup Cilantro, chopped
- 4 cloves Garlic, minced
- 1 Jalapeño, seeded and minced
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 1.5 tsp Salt
- 1/2 tsp Black pepper
Method
- Whisk lime juice, oil, cilantro, garlic, jalapeño, cumin, paprika, salt, and pepper into a marinade.
- Place steak in a zip bag with marinade; massage to coat. Marinate 1-4 hours in the fridge.
- Heat a grill or cast-iron pan to high. Remove steak from marinade and pat dry.
- Grill 3-4 minutes per side for medium-rare (internal 130°F).
- Rest 5-10 minutes, then slice thinly against the grain.
