Ingredients
- 3 cups (300g) Riced cauliflower
- 3 Large eggs
- 1/2 tsp Ground cumin
- 1/2 tsp Garlic powder
- 1/2 tsp Salt
Method
- Preheat oven to 375°F (190°C). Line a sheet pan with parchment.
- Microwave riced cauliflower 5 minutes, then squeeze in a clean towel until very dry.
- Blend cauliflower with eggs, cumin, garlic powder, and salt until smooth.
- Spoon onto parchment in 4 round shapes (about 6 inches each). Smooth into thin discs.
- Bake 12 minutes, flip, and bake 5 more until set and lightly golden.
- Cool on a rack before filling. Stack with parchment between each tortilla to store.
