Ingredients

  • 3 cups (300g) Riced cauliflower
  • 3 Large eggs
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt

Method

  1. Preheat oven to 375°F (190°C). Line a sheet pan with parchment.
  2. Microwave riced cauliflower 5 minutes, then squeeze in a clean towel until very dry.
  3. Blend cauliflower with eggs, cumin, garlic powder, and salt until smooth.
  4. Spoon onto parchment in 4 round shapes (about 6 inches each). Smooth into thin discs.
  5. Bake 12 minutes, flip, and bake 5 more until set and lightly golden.
  6. Cool on a rack before filling. Stack with parchment between each tortilla to store.
