Ingredients

  • 2 cups (225g) Mozzarella, shredded (for crust)
  • 1/2 cup (50g) Parmesan, finely grated (for crust)
  • 1/4 cup (60g) Low-sugar marinara
  • 1 cup (113g) Mozzarella, shredded (topping)
  • 12 Pepperoni slices
  • 1 tsp Italian seasoning

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Mix the 2 cups mozzarella with parmesan and spread in a thin, even 10-inch round on the parchment.
  3. Bake 6-8 minutes until the cheese is melted, golden, and bubbling.
  4. Top with marinara, the additional mozzarella, pepperoni, and Italian seasoning.
  5. Return to the oven 4-5 minutes until the topping cheese melts.
  6. Let rest 1 minute, then slice and serve.
