Ingredients
- 2 oz (60g) Sharp cheddar, shredded
- 3 oz (85g) Ground beef (80/20)
- 1/2 tsp Chili powder
- 1/4 tsp Ground cumin
- 1/4 tsp Smoked paprika
- 1/4 tsp Garlic powder
- 1 1/2 tbsp (22g) Sour cream
- 1/2 medium Avocado, sliced
- 1/4 cup Iceberg lettuce, shredded
- 2 tbsp Tomato, finely diced
- to taste Salt and black pepper
Method
- Heat a non-stick skillet over medium heat. Sprinkle 1 oz (30g) of cheddar in a 5-inch round; cook 2-3 minutes until lacy and golden underneath. Lift gently with a spatula and drape over a rolling pin to set into a flat shell. Repeat with the remaining cheddar.
- In the same skillet, brown the ground beef over medium-high heat, breaking it up with a spoon. Drain excess fat.
- Stir in chili powder, cumin, smoked paprika, garlic powder, salt, and pepper; cook 1 more minute until fragrant.
- Lay one cheese shell flat. Top with seasoned beef, sour cream, avocado, lettuce, and tomato.
- Cap with the second cheese shell and serve while still crisp.
