Ingredients

  • 2 oz (60g) Sharp cheddar, shredded
  • 3 oz (85g) Ground beef (80/20)
  • 1/2 tsp Chili powder
  • 1/4 tsp Ground cumin
  • 1/4 tsp Smoked paprika
  • 1/4 tsp Garlic powder
  • 1 1/2 tbsp (22g) Sour cream
  • 1/2 medium Avocado, sliced
  • 1/4 cup Iceberg lettuce, shredded
  • 2 tbsp Tomato, finely diced
  • to taste Salt and black pepper

Method

  1. Heat a non-stick skillet over medium heat. Sprinkle 1 oz (30g) of cheddar in a 5-inch round; cook 2-3 minutes until lacy and golden underneath. Lift gently with a spatula and drape over a rolling pin to set into a flat shell. Repeat with the remaining cheddar.
  2. In the same skillet, brown the ground beef over medium-high heat, breaking it up with a spoon. Drain excess fat.
  3. Stir in chili powder, cumin, smoked paprika, garlic powder, salt, and pepper; cook 1 more minute until fragrant.
  4. Lay one cheese shell flat. Top with seasoned beef, sour cream, avocado, lettuce, and tomato.
  5. Cap with the second cheese shell and serve while still crisp.
