Ingredients

  • 2 lbs (900g) Ground beef (80/20)
  • 4 oz (115g) Cheddar cheese, cubed
  • 1 large Egg
  • 1/3 cup Almond flour
  • 1/4 cup Dill pickles, diced
  • 3 tbsp Sugar-free ketchup
  • 2 tbsp Yellow mustard
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • to taste Salt and pepper

Method

  1. Preheat oven to 375°F (190°C).
  2. Mix ground beef, egg, almond flour, pickles, onion powder, garlic powder, salt, and pepper.
  3. Press half the mixture into a loaf pan. Layer cheddar cubes in the center.
  4. Top with remaining meat mixture, pressing edges to seal.
  5. Mix ketchup and mustard, spread on top.
  6. Bake 40-45 minutes until internal temp reaches 160°F (71°C). Rest 10 minutes.
