Ingredients
- 2 (6 oz / 170g each) Chicken breast
- 1 tbsp Olive oil (for grilling)
- 6 cups Romaine lettuce, chopped
- 1/3 cup (33g) Parmesan, shaved
- 3 tbsp Mayonnaise
- 1 tsp Anchovy paste
- 1 clove Garlic, minced
- 1 tbsp Lemon juice
- 1/2 tsp Dijon mustard
- to taste Salt and black pepper
Method
- Season chicken with salt and pepper; rub with olive oil.
- Grill or pan-sear over medium-high heat 5-6 minutes per side until 165°F internal.
- Rest chicken 5 minutes, then slice.
- Whisk mayo, anchovy paste, garlic, lemon juice, and Dijon to make the dressing.
- Toss romaine with dressing and half the parmesan. Plate and top with sliced chicken and remaining parmesan.
