Ingredients

  • 2 (6 oz / 170g each) Chicken breast
  • 1 tbsp Olive oil (for grilling)
  • 6 cups Romaine lettuce, chopped
  • 1/3 cup (33g) Parmesan, shaved
  • 3 tbsp Mayonnaise
  • 1 tsp Anchovy paste
  • 1 clove Garlic, minced
  • 1 tbsp Lemon juice
  • 1/2 tsp Dijon mustard
  • to taste Salt and black pepper

Method

  1. Season chicken with salt and pepper; rub with olive oil.
  2. Grill or pan-sear over medium-high heat 5-6 minutes per side until 165°F internal.
  3. Rest chicken 5 minutes, then slice.
  4. Whisk mayo, anchovy paste, garlic, lemon juice, and Dijon to make the dressing.
  5. Toss romaine with dressing and half the parmesan. Plate and top with sliced chicken and remaining parmesan.
