Ingredients

  • 1.5 lbs (680g) Chicken breast, sliced
  • 2 Bell peppers, sliced
  • 1/2 medium Onion, sliced
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 2 tbsp Lime juice
  • 2 tbsp Avocado oil
  • 2 cups Cauliflower rice
  • for topping Sour cream and avocado

Method

  1. Toss chicken with chili powder, cumin, paprika, salt.
  2. Stir-fry chicken in avocado oil over high heat 5 min. Remove.
  3. Sauté peppers and onion 4 minutes.
  4. Return chicken, add lime juice, toss together.
  5. Serve over cauliflower rice with sour cream and avocado.
