Ingredients
- 1.5 lbs (680g) Chicken breast, sliced
- 2 Bell peppers, sliced
- 1/2 medium Onion, sliced
- 1 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 2 tbsp Lime juice
- 2 tbsp Avocado oil
- 2 cups Cauliflower rice
- for topping Sour cream and avocado
Method
- Toss chicken with chili powder, cumin, paprika, salt.
- Stir-fry chicken in avocado oil over high heat 5 min. Remove.
- Sauté peppers and onion 4 minutes.
- Return chicken, add lime juice, toss together.
- Serve over cauliflower rice with sour cream and avocado.
