Ingredients
- 2 (6 oz / 170g each) Cube steak
- 1 cup (30g) Pork rinds, crushed
- 1/4 cup Almond flour
- 1 large Egg
- 2 tbsp Heavy cream (for dredge)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- to taste Salt and black pepper
- 1/3 cup Avocado oil (for frying)
- 2 tbsp Butter
- 1 cup Heavy cream (for gravy)
- 1/4 cup Beef broth
- 1/4 tsp Xanthan gum
Method
- Pat steaks dry; season with salt and pepper.
- Whisk egg with 2 tbsp cream in one bowl. Mix pork rinds, almond flour, paprika, and garlic powder in another.
- Dip each steak in egg, then press firmly into the crumb coating on both sides.
- Heat oil to 350°F (175°C). Fry steaks 3-4 minutes per side until deeply golden and 145°F internal. Rest on a rack.
- Pour off oil, leaving 1 tbsp drippings. Add butter; whisk in 1 cup cream and broth. Simmer 2 minutes.
- Whisk in xanthan gum until thick. Season with plenty of black pepper. Pour over steaks.
