Ingredients

  • 2 (6 oz / 170g each) Cube steak
  • 1 cup (30g) Pork rinds, crushed
  • 1/4 cup Almond flour
  • 1 large Egg
  • 2 tbsp Heavy cream (for dredge)
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • to taste Salt and black pepper
  • 1/3 cup Avocado oil (for frying)
  • 2 tbsp Butter
  • 1 cup Heavy cream (for gravy)
  • 1/4 cup Beef broth
  • 1/4 tsp Xanthan gum

Method

  1. Pat steaks dry; season with salt and pepper.
  2. Whisk egg with 2 tbsp cream in one bowl. Mix pork rinds, almond flour, paprika, and garlic powder in another.
  3. Dip each steak in egg, then press firmly into the crumb coating on both sides.
  4. Heat oil to 350°F (175°C). Fry steaks 3-4 minutes per side until deeply golden and 145°F internal. Rest on a rack.
  5. Pour off oil, leaving 1 tbsp drippings. Add butter; whisk in 1 cup cream and broth. Simmer 2 minutes.
  6. Whisk in xanthan gum until thick. Season with plenty of black pepper. Pour over steaks.
