Ingredients

  • 2 large (450g) Chicken breasts, sliced thick
  • 1/2 cup Sugar-free marinara sauce
  • 4 oz (115g) Fresh mozzarella, sliced
  • 2 tbsp Parmesan, grated
  • 1 tsp Italian seasoning
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Method

  1. Preheat oven to 400°F (200°C).
  2. Slice each chicken breast horizontally into thick rounds (about 1 inch thick).
  3. Season with salt, pepper, and Italian seasoning. Sear in olive oil 3-4 minutes per side until golden.
  4. Top each chicken round with marinara, a slice of mozzarella, and a sprinkle of parmesan.
  5. Bake 8-10 minutes until cheese is melted and bubbly.
  6. Garnish with fresh basil and serve hot.
