Ingredients
- 2 large (450g) Chicken breasts, sliced thick
- 1/2 cup Sugar-free marinara sauce
- 4 oz (115g) Fresh mozzarella, sliced
- 2 tbsp Parmesan, grated
- 1 tsp Italian seasoning
- 1 tbsp Olive oil
- to taste Salt and pepper
Method
- Preheat oven to 400°F (200°C).
- Slice each chicken breast horizontally into thick rounds (about 1 inch thick).
- Season with salt, pepper, and Italian seasoning. Sear in olive oil 3-4 minutes per side until golden.
- Top each chicken round with marinara, a slice of mozzarella, and a sprinkle of parmesan.
- Bake 8-10 minutes until cheese is melted and bubbly.
- Garnish with fresh basil and serve hot.
