Ingredients
- 1.5 lbs (680g) Chicken thighs, boneless
- 2 medium Zucchini, chunked
- 1 large Red bell pepper, chunked
- 1 small Red onion, wedged
- 3 tbsp Olive oil
- 1 tbsp Oregano
- 1/2 cup Greek yogurt (full fat)
- 1/2 cup Cucumber, grated and squeezed
- 1 clove Garlic, minced
- 1 tbsp Lemon juice
- to taste Salt and pepper
Method
- Preheat oven to 425°F (220°C).
- Toss chicken, zucchini, bell pepper, and onion with olive oil, oregano, salt, and pepper.
- Spread on a sheet pan in a single layer.
- Roast 25-30 minutes until chicken is cooked through and veggies are tender.
- Mix yogurt, cucumber, garlic, lemon juice, and salt for tzatziki.
- Serve chicken and veggies with tzatziki on the side.
