Ingredients

  • 1.5 lbs (680g) Chicken thighs, boneless
  • 2 medium Zucchini, chunked
  • 1 large Red bell pepper, chunked
  • 1 small Red onion, wedged
  • 3 tbsp Olive oil
  • 1 tbsp Oregano
  • 1/2 cup Greek yogurt (full fat)
  • 1/2 cup Cucumber, grated and squeezed
  • 1 clove Garlic, minced
  • 1 tbsp Lemon juice
  • to taste Salt and pepper

Method

  1. Preheat oven to 425°F (220°C).
  2. Toss chicken, zucchini, bell pepper, and onion with olive oil, oregano, salt, and pepper.
  3. Spread on a sheet pan in a single layer.
  4. Roast 25-30 minutes until chicken is cooked through and veggies are tender.
  5. Mix yogurt, cucumber, garlic, lemon juice, and salt for tzatziki.
  6. Serve chicken and veggies with tzatziki on the side.
