- 300 g lamb
- 80 g Feta cheese
- 2 medium tomato
- 3 cloves garlic
- 1 tsp thyme
- 2 tbsp olive oil
Method
- Preheat the oven to 220°C (425°F) and cut four large sheets of parchment paper or foil, each large enough to fully enclose a portion of the lamb.
- Rub the lamb pieces with olive oil, crushed garlic, and thyme, ensuring the meat is evenly coated on all sides during the 19-minute preparation.
- Divide the seasoned lamb among the four parchment sheets, topping each portion with sliced tomato and crumbled Feta cheese.
- Fold and seal each parchment parcel tightly so that no steam can escape during cooking, in the traditional kleftiko style.
- Place the sealed parcels on a baking tray and roast in the preheated oven for 32 minutes, allowing the lamb to steam and braise within its own parcel.
- Remove the tray from the oven, carefully open each parcel at the table to release the aromatic steam, and serve immediately.
