Ingredients

  • 300 g lamb
  • 80 g Feta cheese
  • 2 medium tomato
  • 3 cloves garlic
  • 1 tsp thyme
  • 2 tbsp olive oil

Method

  1. Preheat the oven to 220°C (425°F) and cut four large sheets of parchment paper or foil, each large enough to fully enclose a portion of the lamb.
  2. Rub the lamb pieces with olive oil, crushed garlic, and thyme, ensuring the meat is evenly coated on all sides during the 19-minute preparation.
  3. Divide the seasoned lamb among the four parchment sheets, topping each portion with sliced tomato and crumbled Feta cheese.
  4. Fold and seal each parchment parcel tightly so that no steam can escape during cooking, in the traditional kleftiko style.
  5. Place the sealed parcels on a baking tray and roast in the preheated oven for 32 minutes, allowing the lamb to steam and braise within its own parcel.
  6. Remove the tray from the oven, carefully open each parcel at the table to release the aromatic steam, and serve immediately.
