Ingredients

  • 1 cup (140g) Fresh blueberries
  • 1/2 cup Full-fat Greek yogurt
  • 1 tbsp Erythritol or monk fruit
  • 1/4 tsp Vanilla extract

Method

  1. Line a baking sheet with parchment paper.
  2. Mix Greek yogurt with sweetener and vanilla until smooth.
  3. Using a toothpick, dip each blueberry into the yogurt, letting excess drip off.
  4. Place coated blueberries on the parchment, spaced apart.
  5. Freeze at least 2 hours until firm. Transfer to a freezer-safe container.
  6. Eat straight from the freezer for the best texture.
