Ingredients

  • 4 oz (113g) Crumbled feta cheese
  • 4 Large eggs
  • 1 tbsp Olive oil
  • 1 tsp Fresh oregano, chopped
  • 1/4 tsp Black pepper
  • pinch Red pepper flakes

Method

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Sprinkle feta in two flat circles in the pan. Cook 1-2 minutes until edges bubble and turn golden.
  3. Crack 2 eggs into the center of each feta circle.
  4. Cover and cook 2-3 minutes until whites set and yolks remain runny.
  5. Slide onto plates. Top with oregano, black pepper, and red pepper flakes.
