Ingredients
- 4 oz (113g) Crumbled feta cheese
- 4 Large eggs
- 1 tbsp Olive oil
- 1 tsp Fresh oregano, chopped
- 1/4 tsp Black pepper
- pinch Red pepper flakes
Method
- Heat olive oil in a non-stick skillet over medium heat.
- Sprinkle feta in two flat circles in the pan. Cook 1-2 minutes until edges bubble and turn golden.
- Crack 2 eggs into the center of each feta circle.
- Cover and cook 2-3 minutes until whites set and yolks remain runny.
- Slide onto plates. Top with oregano, black pepper, and red pepper flakes.
