Ingredients

  • 3 Large eggs, separated
  • 3 tbsp (45g) Cream cheese, softened
  • 1/4 tsp Cream of tartar
  • 3 (3 oz / 85g) Deli turkey slices
  • 1 (28g) Cheddar slice
  • 1 tbsp Mayonnaise
  • 2 leaves Romaine lettuce
  • pinch Salt

Method

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
  2. Whip egg whites with cream of tartar to stiff peaks.
  3. In another bowl, whisk yolks with cream cheese and salt until smooth.
  4. Gently fold yolk mixture into the whites, keeping the volume.
  5. Spoon into 4 round mounds (about 4 inches each); bake 25-30 minutes until golden. Cool fully.
  6. Spread mayo on two cloud breads. Layer turkey, cheddar, and lettuce. Top with another cloud bread.
  7. Save remaining cloud bread for tomorrow.
