Ingredients

  • 1/2 cup Coconut oil
  • 1/2 cup Unsweetened shredded coconut
  • 2 tbsp Almond butter
  • 3 tbsp Powdered erythritol
  • 2 tbsp Cocoa powder, unsweetened
  • 2 tsp Instant espresso powder
  • 1 tsp Vanilla extract
  • 1/4 tsp Pinch of salt

Method

  1. Gently melt coconut oil over low heat.
  2. Stir in shredded coconut, almond butter, erythritol, cocoa, espresso powder, vanilla, and salt.
  3. Spoon into mini muffin liners (or silicone molds).
  4. Freeze 30 minutes until firm. Store in the freezer.
