Ingredients
- 1/2 cup Coconut oil
- 1/2 cup Unsweetened shredded coconut
- 2 tbsp Almond butter
- 3 tbsp Powdered erythritol
- 2 tbsp Cocoa powder, unsweetened
- 2 tsp Instant espresso powder
- 1 tsp Vanilla extract
- 1/4 tsp Pinch of salt
Method
- Gently melt coconut oil over low heat.
- Stir in shredded coconut, almond butter, erythritol, cocoa, espresso powder, vanilla, and salt.
- Spoon into mini muffin liners (or silicone molds).
- Freeze 30 minutes until firm. Store in the freezer.
