Ingredients
- 6 oz (170g) Breakfast sausage, bulk
- 4 Large eggs
- 1/2 cup Bell peppers, diced
- 1/4 cup Yellow onion, diced
- 1/2 cup (56g) Sharp cheddar, shredded
- 1 tbsp Butter
- to taste Salt, black pepper, paprika
Method
- Brown the sausage in a 10-inch skillet over medium-high heat, breaking it up, 5-6 minutes.
- Push sausage to one side. Add butter, peppers, and onion. Sauté 4-5 minutes until softened, then stir into the sausage.
- Make 4 wells in the mixture. Crack an egg into each. Season with salt, pepper, and paprika.
- Cover and cook 4-5 minutes until whites are set but yolks remain runny.
- Scatter cheddar over the top. Cover 1 more minute to melt, then serve straight from the pan.
