Ingredients

  • 6 oz (170g) Breakfast sausage, bulk
  • 4 Large eggs
  • 1/2 cup Bell peppers, diced
  • 1/4 cup Yellow onion, diced
  • 1/2 cup (56g) Sharp cheddar, shredded
  • 1 tbsp Butter
  • to taste Salt, black pepper, paprika

Method

  1. Brown the sausage in a 10-inch skillet over medium-high heat, breaking it up, 5-6 minutes.
  2. Push sausage to one side. Add butter, peppers, and onion. Sauté 4-5 minutes until softened, then stir into the sausage.
  3. Make 4 wells in the mixture. Crack an egg into each. Season with salt, pepper, and paprika.
  4. Cover and cook 4-5 minutes until whites are set but yolks remain runny.
  5. Scatter cheddar over the top. Cover 1 more minute to melt, then serve straight from the pan.
