Ingredients
- 2 slices Almond flour bread
- 4 oz (115g) Chicken breast, butterflied
- 1/4 cup Crushed pork rinds
- 1 tbsp Parmesan, grated
- 1 Egg, beaten
- 2 Bacon strips, crisp
- 1/3 small Avocado, sliced
- 2 leaves Romaine lettuce
- 2 slices Tomato, sliced
- 1 tbsp Mayonnaise
- 2 tbsp Olive oil (for frying)
- to taste Salt, pepper, paprika
Method
- Mix pork rinds, parmesan, and seasonings. Dip chicken in egg, then coat in pork rinds.
- Pan-fry in olive oil 4-5 minutes per side until crisp and cooked through.
- Spread mayo on toasted almond bread.
- Layer chicken, bacon, avocado, lettuce, and tomato.
- Close and slice on the diagonal.
