Ingredients

  • 2 slices Almond flour bread
  • 4 oz (115g) Chicken breast, butterflied
  • 1/4 cup Crushed pork rinds
  • 1 tbsp Parmesan, grated
  • 1 Egg, beaten
  • 2 Bacon strips, crisp
  • 1/3 small Avocado, sliced
  • 2 leaves Romaine lettuce
  • 2 slices Tomato, sliced
  • 1 tbsp Mayonnaise
  • 2 tbsp Olive oil (for frying)
  • to taste Salt, pepper, paprika

Method

  1. Mix pork rinds, parmesan, and seasonings. Dip chicken in egg, then coat in pork rinds.
  2. Pan-fry in olive oil 4-5 minutes per side until crisp and cooked through.
  3. Spread mayo on toasted almond bread.
  4. Layer chicken, bacon, avocado, lettuce, and tomato.
  5. Close and slice on the diagonal.
