Ingredients

  • 1 large Keto wrap (low-carb tortilla)
  • 4 oz (115g) Chicken tenderloins
  • 1/4 cup Crushed pork rinds
  • 1 tbsp Parmesan, grated
  • 1 Egg, beaten
  • 2 tbsp Olive oil (for frying)
  • 1/4 cup Romaine lettuce, shredded
  • 2 slices Tomato, sliced
  • 1 tbsp Ranch dressing
  • to taste Salt, pepper, paprika

Method

  1. Mix pork rinds with parmesan and seasoning.
  2. Dip chicken in beaten egg, then coat in pork rind mixture.
  3. Heat olive oil over medium. Pan-fry chicken 4-5 minutes per side until golden and cooked through.
  4. Warm the wrap. Spread ranch; layer crispy chicken, lettuce, and tomato.
  5. Roll up tightly and slice on the bias.
