Ingredients
- 1 large Keto wrap (low-carb tortilla)
- 4 oz (115g) Chicken tenderloins
- 1/4 cup Crushed pork rinds
- 1 tbsp Parmesan, grated
- 1 Egg, beaten
- 2 tbsp Olive oil (for frying)
- 1/4 cup Romaine lettuce, shredded
- 2 slices Tomato, sliced
- 1 tbsp Ranch dressing
- to taste Salt, pepper, paprika
Method
- Mix pork rinds with parmesan and seasoning.
- Dip chicken in beaten egg, then coat in pork rind mixture.
- Heat olive oil over medium. Pan-fry chicken 4-5 minutes per side until golden and cooked through.
- Warm the wrap. Spread ranch; layer crispy chicken, lettuce, and tomato.
- Roll up tightly and slice on the bias.
