Ingredients

  • 5 (about 300g) Persian cucumbers, thinly sliced
  • 2 cans (5 oz / 140g each) Canned tuna in water, drained
  • 1/3 cup (50g) Dill pickles, finely diced
  • 2 Green onions, finely sliced
  • 1/4 small (25g) Red onion, finely diced
  • 1/4 cup Fresh cilantro or parsley, finely chopped
  • 4 tbsp (60g) Plain whole-milk Greek yogurt
  • 1.5 tbsp Mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp Lemon juice (1/2 small lemon)
  • to taste Salt and black pepper

Method

  1. Pile the sliced cucumbers in a large bowl or shallow serving dish.
  2. Top with the drained tuna, breaking it up into chunks with a fork.
  3. Scatter the pickles, green onions, red onion, and herbs over the top.
  4. Whisk together the Greek yogurt, mayo, Dijon, lemon juice, and a generous pinch of salt and pepper to make the dressing.
  5. Pour the dressing over the bowl and toss until everything is coated.
  6. Serve as is, or scoop over halved bell peppers for extra crunch.
