Ingredients
- 5 (about 300g) Persian cucumbers, thinly sliced
- 2 cans (5 oz / 140g each) Canned tuna in water, drained
- 1/3 cup (50g) Dill pickles, finely diced
- 2 Green onions, finely sliced
- 1/4 small (25g) Red onion, finely diced
- 1/4 cup Fresh cilantro or parsley, finely chopped
- 4 tbsp (60g) Plain whole-milk Greek yogurt
- 1.5 tbsp Mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp Lemon juice (1/2 small lemon)
- to taste Salt and black pepper
Method
- Pile the sliced cucumbers in a large bowl or shallow serving dish.
- Top with the drained tuna, breaking it up into chunks with a fork.
- Scatter the pickles, green onions, red onion, and herbs over the top.
- Whisk together the Greek yogurt, mayo, Dijon, lemon juice, and a generous pinch of salt and pepper to make the dressing.
- Pour the dressing over the bowl and toss until everything is coated.
- Serve as is, or scoop over halved bell peppers for extra crunch.
