Ingredients
- 3 Large eggs
- 1 oz (28g) Diced ham
- 1/4 cup Bell pepper, finely diced
- 1 tbsp Onion, finely diced
- 1 oz (28g) Sharp cheddar, shredded
- 1 tbsp Butter
- to taste Salt and black pepper
Method
- Melt half the butter in an 8-inch nonstick skillet over medium heat. Add pepper and onion and cook 2-3 minutes until softened.
- Add the ham and cook 1 more minute to warm through. Slide the mixture onto a plate.
- Wipe the pan, lower heat to medium-low, and add the remaining butter.
- Whisk eggs with a pinch of salt; pour into the pan. Tilt to coat. Let set 30 seconds, then push the edges in.
- When the top is just set, scatter ham mixture and cheese over one half. Fold the omelet over and slide onto a plate.
