Ingredients

  • 3 Large eggs
  • 1 oz (28g) Diced ham
  • 1/4 cup Bell pepper, finely diced
  • 1 tbsp Onion, finely diced
  • 1 oz (28g) Sharp cheddar, shredded
  • 1 tbsp Butter
  • to taste Salt and black pepper

Method

  1. Melt half the butter in an 8-inch nonstick skillet over medium heat. Add pepper and onion and cook 2-3 minutes until softened.
  2. Add the ham and cook 1 more minute to warm through. Slide the mixture onto a plate.
  3. Wipe the pan, lower heat to medium-low, and add the remaining butter.
  4. Whisk eggs with a pinch of salt; pour into the pan. Tilt to coat. Let set 30 seconds, then push the edges in.
  5. When the top is just set, scatter ham mixture and cheese over one half. Fold the omelet over and slide onto a plate.
