Ingredients

  • 12 Large eggs
  • 1/4 cup Mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp White vinegar
  • for garnish Paprika
  • for garnish Fresh chives
  • to taste Salt and pepper

Method

  1. Boil eggs 12 minutes. Ice bath 5 minutes. Peel.
  2. Halve eggs. Scoop yolks into a bowl.
  3. Mash yolks with mayo, mustard, vinegar, salt and pepper until smooth.
  4. Pipe or spoon filling back into egg white halves.
  5. Sprinkle with paprika and chives.
