Ingredients

  • 2 Large eggs
  • 1 tsp Butter (for the pan)
  • 1 can (5 oz / 140g) Canned tuna in water, drained
  • 2 tbsp Mayonnaise
  • 2 tbsp Celery, finely diced
  • 1 tsp Lemon juice
  • to taste Salt and black pepper

Method

  1. Whisk eggs with a pinch of salt; pour into a buttered nonstick skillet over medium-low heat.
  2. Cook into a thin even omelette, 2-3 minutes; flip briefly to set the top. Slide onto a plate.
  3. Mix tuna with mayo, celery, lemon juice, salt, and pepper.
  4. Spoon tuna salad along the center of the egg wrap; fold sides over and roll up.
  5. Slice in half on the bias and serve.
