Ingredients
- 6 Hard-boiled egg yolks, mashed
- 3 tbsp Unsweetened cocoa powder
- 4 tbsp (56g) Butter, softened
- 2 oz (56g) Sugar-free dark chocolate, melted
- 1/4 cup Monk fruit sweetener (powdered)
- 1 tsp Vanilla extract
Method
- Press hard-boiled yolks through a fine sieve into a bowl.
- Beat in butter, cocoa powder, monk fruit, and vanilla until a smooth fudgy paste forms.
- Roll into 8 truffle balls. Chill 15 minutes to firm up.
- Dip each truffle into melted sugar-free chocolate, letting excess drip off.
- Set on parchment and refrigerate 30 minutes until the shell hardens. Serve cold.
