Ingredients

  • 6 Hard-boiled egg yolks, mashed
  • 3 tbsp Unsweetened cocoa powder
  • 4 tbsp (56g) Butter, softened
  • 2 oz (56g) Sugar-free dark chocolate, melted
  • 1/4 cup Monk fruit sweetener (powdered)
  • 1 tsp Vanilla extract

Method

  1. Press hard-boiled yolks through a fine sieve into a bowl.
  2. Beat in butter, cocoa powder, monk fruit, and vanilla until a smooth fudgy paste forms.
  3. Roll into 8 truffle balls. Chill 15 minutes to firm up.
  4. Dip each truffle into melted sugar-free chocolate, letting excess drip off.
  5. Set on parchment and refrigerate 30 minutes until the shell hardens. Serve cold.
