Ingredients

  • 1/2 cup (75g) Fresh blueberries
  • 1 cup (225g) Full-fat Greek yogurt
  • 1/2 tsp Vanilla extract
  • 2 tbsp Monk fruit sweetener

Method

  1. Stir Greek yogurt with vanilla and monk fruit until smooth.
  2. Toss blueberries gently into the yogurt to coat.
  3. Spoon clusters of 4-5 coated berries onto a parchment-lined sheet pan.
  4. Freeze at least 2 hours until completely solid.
  5. Transfer to a freezer container. Eat straight from the freezer.
