Ingredients

  • 1 lb (450g) Ground beef
  • 1/4 cup Almond flour
  • 1 Egg
  • 1/3 cup Parmesan, grated
  • 1 tsp Italian seasoning
  • 4 medium Zucchini, spiralized
  • 4 tbsp Butter
  • 5 cloves Garlic, minced
  • 1/4 tsp Red pepper flakes
  • 2 tbsp Fresh parsley
  • to taste Salt and pepper

Method

  1. Mix beef, almond flour, egg, half the parmesan, Italian seasoning, salt and pepper. Roll into 16 meatballs.
  2. Brown meatballs in 1 tbsp butter on all sides, about 8 minutes. Remove.
  3. Melt remaining butter, add garlic and red pepper flakes. Cook 30 seconds.
  4. Add zoodles, toss 2-3 minutes until just tender. Return meatballs.
  5. Sprinkle with remaining parmesan and parsley.
