Ingredients
- 1 lb (450g) Ground beef
- 1/4 cup Almond flour
- 1 Egg
- 1/3 cup Parmesan, grated
- 1 tsp Italian seasoning
- 4 medium Zucchini, spiralized
- 4 tbsp Butter
- 5 cloves Garlic, minced
- 1/4 tsp Red pepper flakes
- 2 tbsp Fresh parsley
- to taste Salt and pepper
Method
- Mix beef, almond flour, egg, half the parmesan, Italian seasoning, salt and pepper. Roll into 16 meatballs.
- Brown meatballs in 1 tbsp butter on all sides, about 8 minutes. Remove.
- Melt remaining butter, add garlic and red pepper flakes. Cook 30 seconds.
- Add zoodles, toss 2-3 minutes until just tender. Return meatballs.
- Sprinkle with remaining parmesan and parsley.
