Ingredients
- 2 cans (14 oz / 400g each) Palmini hearts-of-palm pasta, drained and rinsed
- 4 tbsp Extra virgin olive oil
- 4 cloves Garlic, thinly sliced
- 1 tsp Red pepper flakes
- 1/4 cup Fresh parsley, chopped
- 2 tbsp Parmesan, grated
- to taste Salt and black pepper
Method
- Drain palmini, rinse well, and soak in milk or water for 10 minutes if it tastes briny.
- Heat olive oil in a skillet over medium. Add garlic and red pepper flakes; cook 1-2 minutes until garlic is fragrant and just golden.
- Add palmini and toss to coat. Cook 2-3 minutes to warm through.
- Stir in parsley and parmesan, season with salt and pepper, and serve.
