Ingredients

  • 12 oz (340g) Large shrimp, peeled and deveined
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 5 oz (140g, ~6 cups) Baby spinach
  • 2 tbsp Grated parmesan
  • 1 tsp Lemon juice
  • 1/4 tsp Red pepper flakes (optional)
  • to taste Salt and black pepper
  • 1 tbsp Fresh parsley, chopped

Method

  1. Pat shrimp dry; season with salt, pepper, and red pepper flakes.
  2. Melt butter with olive oil in a large skillet over medium-high heat.
  3. Add garlic; sauté 30 seconds until fragrant (do not brown).
  4. Add shrimp in a single layer; cook 1.5-2 minutes per side until pink and opaque. Transfer to a plate.
  5. Add spinach to the same pan in batches; toss 1-2 minutes until just wilted.
  6. Return shrimp to the pan; add lemon juice and toss to combine.
  7. Plate, finish with parmesan and parsley, and serve immediately.
