Ingredients
- 12 oz (340g) Large shrimp, peeled and deveined
- 2 tbsp Butter
- 1 tbsp Olive oil
- 4 cloves Garlic, minced
- 5 oz (140g, ~6 cups) Baby spinach
- 2 tbsp Grated parmesan
- 1 tsp Lemon juice
- 1/4 tsp Red pepper flakes (optional)
- to taste Salt and black pepper
- 1 tbsp Fresh parsley, chopped
Method
- Pat shrimp dry; season with salt, pepper, and red pepper flakes.
- Melt butter with olive oil in a large skillet over medium-high heat.
- Add garlic; sauté 30 seconds until fragrant (do not brown).
- Add shrimp in a single layer; cook 1.5-2 minutes per side until pink and opaque. Transfer to a plate.
- Add spinach to the same pan in batches; toss 1-2 minutes until just wilted.
- Return shrimp to the pan; add lemon juice and toss to combine.
- Plate, finish with parmesan and parsley, and serve immediately.
