Ingredients
- 1.5 lbs (680g) Chicken thighs, cubed
- 3 tbsp Olive oil
- 2 tbsp Lemon juice
- 1 tbsp Dried oregano
- 3 cloves Garlic, minced
- 1/2 cup Cucumber, diced
- 1/2 cup Cherry tomatoes, halved
- 1/4 cup Kalamata olives
- 1/3 cup Feta cheese, crumbled
- 2 cups Cauliflower rice
Method
- Marinate chicken in olive oil, lemon juice, oregano, garlic, salt and pepper 15+ minutes.
- Thread onto skewers or pan-fry over high heat 5-6 min per side.
- Sauté cauliflower rice until tender.
- Assemble bowls: cauliflower rice, chicken, cucumber, tomato, olives, feta.
- Drizzle with tzatziki or extra olive oil and lemon.
