Ingredients

  • 1.5 lbs (680g) Chicken thighs, cubed
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Dried oregano
  • 3 cloves Garlic, minced
  • 1/2 cup Cucumber, diced
  • 1/2 cup Cherry tomatoes, halved
  • 1/4 cup Kalamata olives
  • 1/3 cup Feta cheese, crumbled
  • 2 cups Cauliflower rice

Method

  1. Marinate chicken in olive oil, lemon juice, oregano, garlic, salt and pepper 15+ minutes.
  2. Thread onto skewers or pan-fry over high heat 5-6 min per side.
  3. Sauté cauliflower rice until tender.
  4. Assemble bowls: cauliflower rice, chicken, cucumber, tomato, olives, feta.
  5. Drizzle with tzatziki or extra olive oil and lemon.
