Ingredients

  • 1 medium (450g) Eggplant, cut into 1/2-inch rounds
  • 3 tbsp Olive oil
  • 4 oz (115g) Fresh mozzarella, sliced
  • 1 small Tomato, sliced
  • 2 tbsp Basil pesto
  • 6 Fresh basil leaves
  • to taste Salt and black pepper

Method

  1. Brush eggplant rounds with olive oil; season with salt and pepper.
  2. Grill or pan-sear over medium-high heat 3-4 minutes per side until tender with char marks.
  3. Build sandwiches: eggplant round → pesto → mozzarella → tomato → basil → eggplant round.
  4. Press gently and serve warm — the cheese softens from the residual heat.
