Ingredients
- 1 medium (450g) Eggplant, cut into 1/2-inch rounds
- 3 tbsp Olive oil
- 4 oz (115g) Fresh mozzarella, sliced
- 1 small Tomato, sliced
- 2 tbsp Basil pesto
- 6 Fresh basil leaves
- to taste Salt and black pepper
Method
- Brush eggplant rounds with olive oil; season with salt and pepper.
- Grill or pan-sear over medium-high heat 3-4 minutes per side until tender with char marks.
- Build sandwiches: eggplant round → pesto → mozzarella → tomato → basil → eggplant round.
- Press gently and serve warm — the cheese softens from the residual heat.
