Ingredients
- 2 Low-carb tortillas (street taco size)
- 8 oz (227g) Ground lamb (or 85/15 ground beef)
- 2 cloves Garlic, minced
- 1 tsp Dried oregano
- 1/2 cup (120g) Whole-milk Greek yogurt
- 1/4 cup (40g) Cucumber, grated and squeezed dry
- 1 clove Garlic for tzatziki
- 1 tbsp Olive oil
- 4 Cherry tomatoes, halved
- 2 tbsp (15g) Red onion, thinly sliced
- to taste Salt and black pepper
Method
- Stir Greek yogurt with grated cucumber, the single garlic clove (minced), olive oil, salt, and a pinch of dill if you have it. Set tzatziki aside.
- Knead lamb with the 2 minced garlic cloves, oregano, salt, and pepper.
- Press half the lamb onto each tortilla in a thin, even layer.
- Sear meat-side down on a hot skillet 3-4 minutes until crusted. Flip and cook 1 minute more.
- Top with tzatziki, cherry tomatoes, and red onion. Fold and serve.
