Ingredients
- 2 Large eggs (for 2 chaffles)
- 1 cup (110g) Mozzarella, shredded (for chaffles)
- 1 tbsp Almond flour
- 3 (3 oz / 85g) Deli ham slices
- 1 (28g) Sharp cheddar slice
- 1 tbsp Mayonnaise
- 1 tsp Dijon mustard (optional)
- to taste Salt and black pepper
Method
- Whisk eggs with mozzarella and almond flour into a thick batter.
- Cook half the batter at a time in a mini waffle maker for 3-4 minutes per chaffle. You'll have 2 chaffles.
- Spread mayo (and Dijon if using) over the inside of both chaffles.
- Layer ham and the cheddar slice on one chaffle; cap with the second chaffle.
- For melty cheese, press the assembled sandwich in a hot dry skillet for 1 minute per side.
- Slice in half and serve.
