Ingredients

  • 10 oz (285g) Sushi-grade ahi tuna, cubed
  • 2 tbsp Coconut aminos
  • 1 tbsp Sesame oil
  • 1 tsp Rice vinegar
  • 1.5 cups (150g) Cauliflower rice
  • 1/2 Avocado, diced
  • 1/2 cup Cucumber, diced
  • 1 Green onion, sliced
  • 1 sheet Nori sheets, sliced into strips
  • 1 tsp Sesame seeds

Method

  1. Toss tuna with coconut aminos, sesame oil, and rice vinegar. Chill 10 minutes.
  2. Steam or sauté cauliflower rice 4-5 minutes until tender; season lightly and let cool slightly.
  3. Divide cauli rice between two bowls. Top with marinated tuna, avocado, cucumber, green onion, and nori strips.
  4. Sprinkle with sesame seeds and serve immediately.
