Ingredients
- 10 oz (285g) Sushi-grade ahi tuna, cubed
- 2 tbsp Coconut aminos
- 1 tbsp Sesame oil
- 1 tsp Rice vinegar
- 1.5 cups (150g) Cauliflower rice
- 1/2 Avocado, diced
- 1/2 cup Cucumber, diced
- 1 Green onion, sliced
- 1 sheet Nori sheets, sliced into strips
- 1 tsp Sesame seeds
Method
- Toss tuna with coconut aminos, sesame oil, and rice vinegar. Chill 10 minutes.
- Steam or sauté cauliflower rice 4-5 minutes until tender; season lightly and let cool slightly.
- Divide cauli rice between two bowls. Top with marinated tuna, avocado, cucumber, green onion, and nori strips.
- Sprinkle with sesame seeds and serve immediately.
