Ingredients

  • 2 lbs (900g) Lean beef (eye of round or top round)
  • 1/3 cup Soy sauce or coconut aminos
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Smoked paprika
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Black pepper, coarse
  • 1 tsp Red pepper flakes
  • 1 tsp Liquid smoke

Method

  1. Freeze beef 1-2 hours until firm. Slice against the grain into 1/8-inch strips.
  2. Whisk all marinade ingredients in a large bowl or zip-top bag.
  3. Add beef strips, toss to coat, and refrigerate at least 4 hours or overnight.
  4. Preheat oven to 175°F (80°C) or use a dehydrator at 160°F (70°C).
  5. Pat strips dry. Arrange on wire racks set over baking sheets so air circulates.
  6. Dehydrate 4-6 hours, flipping halfway, until dry but still pliable.
  7. Cool completely. Store in an airtight container up to 2 weeks (refrigerate longer).
