Ingredients
- 1 Large egg, room temperature
- 1 cup (240ml) Avocado oil
- 1 tsp Dijon mustard
- 1 tbsp Fresh lemon juice
- 1/2 tsp Salt
Method
- Place egg, Dijon, lemon juice, and salt in the bottom of a tall narrow jar that fits an immersion blender.
- Pour avocado oil on top — do not stir. Let the egg settle to the bottom.
- Lower the immersion blender to the bottom and blend on high without moving for 20 seconds until the mixture emulsifies.
- Slowly raise the blender as you continue blending until all the oil is incorporated and the mayo is thick and creamy.
- Transfer to a jar. Refrigerate up to 1 week.
