Ingredients

  • 1 Large egg, room temperature
  • 1 cup (240ml) Avocado oil
  • 1 tsp Dijon mustard
  • 1 tbsp Fresh lemon juice
  • 1/2 tsp Salt

Method

  1. Place egg, Dijon, lemon juice, and salt in the bottom of a tall narrow jar that fits an immersion blender.
  2. Pour avocado oil on top — do not stir. Let the egg settle to the bottom.
  3. Lower the immersion blender to the bottom and blend on high without moving for 20 seconds until the mixture emulsifies.
  4. Slowly raise the blender as you continue blending until all the oil is incorporated and the mayo is thick and creamy.
  5. Transfer to a jar. Refrigerate up to 1 week.
