Ingredients

  • 6 Hard-boiled eggs, peeled and halved
  • 1/4 medium (30g) Red onion, thinly sliced
  • 1 Serrano chile, thinly sliced
  • 1/2 cup (15g) Cilantro, finely chopped
  • 1/4 cup (60ml) Fresh lime juice
  • 2 tbsp White vinegar
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper, cracked

Method

  1. Combine lime juice, vinegar, olive oil, salt, and pepper in a shallow bowl. Whisk to emulsify.
  2. Stir in the cilantro, sliced red onion, and serrano. Add the egg halves yolk-side up.
  3. Spoon some of the brine over each egg and refrigerate 10-15 minutes so the flavors soak in.
  4. Crack fresh black pepper over the top and serve cold, straight from the bowl, with a slotted spoon.
