Ingredients
- 6 Hard-boiled eggs, peeled and halved
- 1/4 medium (30g) Red onion, thinly sliced
- 1 Serrano chile, thinly sliced
- 1/2 cup (15g) Cilantro, finely chopped
- 1/4 cup (60ml) Fresh lime juice
- 2 tbsp White vinegar
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper, cracked
Method
- Combine lime juice, vinegar, olive oil, salt, and pepper in a shallow bowl. Whisk to emulsify.
- Stir in the cilantro, sliced red onion, and serrano. Add the egg halves yolk-side up.
- Spoon some of the brine over each egg and refrigerate 10-15 minutes so the flavors soak in.
- Crack fresh black pepper over the top and serve cold, straight from the bowl, with a slotted spoon.
