Ingredients

  • 1.5 lbs (680g) Boneless chicken thighs
  • 1/4 cup Coconut aminos
  • 2 tbsp Rice vinegar
  • 2 tbsp Erythritol
  • 1/2 tsp Pineapple extract (or 1 tsp pineapple juice)
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1 tsp Sesame oil
  • 2 Green onion, sliced
  • 1 tsp Sesame seeds

Method

  1. Whisk coconut aminos, vinegar, erythritol, pineapple extract, garlic, ginger, and sesame oil in a bowl. Reserve 3 tbsp for glazing.
  2. Add chicken thighs to the remaining marinade and toss; marinate 20 minutes (or up to 8 hours).
  3. Grill or broil over medium-high heat, 6-8 minutes per side, brushing with reserved glaze in the last 2 minutes.
  4. Rest 5 minutes. Slice and top with green onion and sesame seeds.
