Ingredients
- 1.5 lbs (680g) Boneless chicken thighs
- 1/4 cup Coconut aminos
- 2 tbsp Rice vinegar
- 2 tbsp Erythritol
- 1/2 tsp Pineapple extract (or 1 tsp pineapple juice)
- 3 cloves Garlic, minced
- 1 tbsp Fresh ginger, grated
- 1 tsp Sesame oil
- 2 Green onion, sliced
- 1 tsp Sesame seeds
Method
- Whisk coconut aminos, vinegar, erythritol, pineapple extract, garlic, ginger, and sesame oil in a bowl. Reserve 3 tbsp for glazing.
- Add chicken thighs to the remaining marinade and toss; marinate 20 minutes (or up to 8 hours).
- Grill or broil over medium-high heat, 6-8 minutes per side, brushing with reserved glaze in the last 2 minutes.
- Rest 5 minutes. Slice and top with green onion and sesame seeds.
