- 1 lb (450g) Ground pork
- 1/4 cup Parmesan, grated
- 1 large Egg
- 6 cups Chicken broth
- 3 cups Fresh spinach
- 3 cloves Garlic, minced
- 1 tsp Italian seasoning
- to taste Salt and pepper
Method
- Mix pork, parmesan, egg, Italian seasoning, salt, and pepper. Roll into mini meatballs.
- Bring broth and garlic to a simmer.
- Drop in meatballs, cook 10 minutes.
- Add spinach, cook 2 more minutes until wilted.
- Serve with extra parmesan on top.
