Ingredients

  • 4 lbs (1.8kg) Pork shoulder (boneless)
  • 2 tbsp Hawaiian sea salt (or coarse sea salt)
  • 1 tbsp Liquid smoke

Method

  1. Pat the pork shoulder dry. Pierce all over with a fork.
  2. Rub salt all over, then drizzle with liquid smoke and rub it in.
  3. Place fat-side up in a slow cooker. Cover and cook on low for 8 hours, or until fork-tender.
  4. Transfer pork to a board and shred with two forks. Skim fat from the cooker juices and toss the meat with a few tablespoons of the juices to moisten.
  5. Serve over cabbage or cauliflower rice.
