Ingredients
- 8 oz (225g) Thick-cut deli pastrami (fatty/navel cut), warm
- 1 tbsp Spicy brown mustard, sugar-free
- 1 large (80g) Full-sour deli pickle
- 1/2 cup (75g) Sauerkraut, drained
- to taste Black pepper
Method
- Bring 1 inch of water to a boil in a pot fitted with a steamer basket.
- Lay the pastrami slices loosely in the basket; cover and steam 5-8 minutes until the meat is hot, fat is rendered, and slices are tender.
- Pile the steamed pastrami in the center of a plate; crack black pepper over the top.
- Spoon the mustard alongside as a dip — do not pre-spread it.
- Serve the pickle whole or in spears and the sauerkraut in a small bowl on the side.
- Eat hot: dip each forkful of pastrami in mustard, alternate with bites of pickle and sauerkraut.
