Ingredients

  • 1 lb (450g) Large shrimp, peeled
  • 1/2 cup Unsweetened shredded coconut
  • 1/4 cup Almond flour
  • 2 Eggs, beaten
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt
  • 1 cup Avocado oil (for frying)

Method

  1. Mix shredded coconut, almond flour, garlic powder, and salt.
  2. Dip shrimp in egg, then press into coconut mixture.
  3. Heat oil to 350°F (175°C). Fry shrimp in batches 2-3 minutes until golden.
  4. Drain on a wire rack.
  5. Serve with sugar-free sweet chili sauce or lime-mayo dip.
