Ingredients
- 1 lb (450g) Large shrimp, peeled
- 1/2 cup Unsweetened shredded coconut
- 1/4 cup Almond flour
- 2 Eggs, beaten
- 1/2 tsp Garlic powder
- 1/2 tsp Salt
- 1 cup Avocado oil (for frying)
Method
- Mix shredded coconut, almond flour, garlic powder, and salt.
- Dip shrimp in egg, then press into coconut mixture.
- Heat oil to 350°F (175°C). Fry shrimp in batches 2-3 minutes until golden.
- Drain on a wire rack.
- Serve with sugar-free sweet chili sauce or lime-mayo dip.
