Ingredients

  • 1 Low-carb tortilla (10-inch)
  • 2 oz (56g) Breakfast sausage
  • 2 Large eggs
  • 1 oz (28g) Sharp cheddar, shredded
  • 2 tbsp Salsa (no added sugar)
  • 1 tsp Butter
  • to taste Hot sauce

Method

  1. Brown the sausage in a skillet over medium heat, breaking it up, 4-5 minutes. Transfer to a plate.
  2. Wipe the pan; melt butter over medium-low heat. Whisk eggs with a pinch of salt and pour in.
  3. Stir gently until just set but still glossy, then remove from heat.
  4. Warm the tortilla 10 seconds in a dry pan or microwave so it folds without cracking.
  5. Layer sausage, eggs, cheddar, and salsa down the center. Fold in the sides and roll tight.
  6. Return seam-side down to the skillet for 1 minute to seal, then slice and serve with hot sauce.
