Ingredients
- 4 (6 oz each) Chicken breasts
- 8 Deli ham slices
- 4 Swiss cheese slices
- 1/2 cup Almond flour
- 1/4 cup Parmesan, grated
- 2, beaten Eggs
- 2 tbsp Dijon mustard
- 2 tbsp Butter
- to taste Salt and pepper
Method
- Pound chicken breasts thin. Layer ham and swiss on each.
- Roll up tightly, secure with toothpicks.
- Dip in egg, then coat in almond flour-parmesan mix.
- Sear in butter until golden, then bake at 375°F (190°C) for 20 min.
- Drizzle with Dijon mustard to serve.
