Ingredients

  • 4 (6 oz each) Chicken breasts
  • 8 Deli ham slices
  • 4 Swiss cheese slices
  • 1/2 cup Almond flour
  • 1/4 cup Parmesan, grated
  • 2, beaten Eggs
  • 2 tbsp Dijon mustard
  • 2 tbsp Butter
  • to taste Salt and pepper

Method

  1. Pound chicken breasts thin. Layer ham and swiss on each.
  2. Roll up tightly, secure with toothpicks.
  3. Dip in egg, then coat in almond flour-parmesan mix.
  4. Sear in butter until golden, then bake at 375°F (190°C) for 20 min.
  5. Drizzle with Dijon mustard to serve.
