Ingredients
- 1 lb (450g) Chicken breasts
- 4 medium Zucchini, spiralized
- 1/4 cup Basil pesto
- 2 tbsp, chopped Sun-dried tomatoes
- 2 tbsp Pine nuts
- 1/4 cup Parmesan, grated
- 1 tbsp Olive oil
- to taste Salt and pepper
Method
- Season chicken with salt and pepper. Grill or pan-sear 5-6 minutes per side. Slice.
- Toss zucchini noodles with pesto in a large bowl.
- Top with sliced chicken, sun-dried tomatoes, pine nuts, and parmesan.
- Drizzle with olive oil and serve.
