  • 1 lb (450g) Cooked chicken, shredded
  • 2 cups (200g) Shredded cheddar
  • 1 small Bell pepper, diced
  • 1 Jalapeño, sliced
  • 1 tsp Cumin
  • for serving Sour cream
  • for serving Salsa

Method

  1. Sprinkle half the cheddar in a thin layer in a non-stick pan over medium heat.
  2. When cheese melts and edges crisp, add chicken, peppers, jalapeño, and cumin to one half.
  3. Fold cheese tortilla over. Cook 1 minute more.
  4. Serve with sour cream and salsa.
