- 1 lb (450g) Cooked chicken, shredded
- 2 cups (200g) Shredded cheddar
- 1 small Bell pepper, diced
- 1 Jalapeño, sliced
- 1 tsp Cumin
- for serving Sour cream
- for serving Salsa
Method
- Sprinkle half the cheddar in a thin layer in a non-stick pan over medium heat.
- When cheese melts and edges crisp, add chicken, peppers, jalapeño, and cumin to one half.
- Fold cheese tortilla over. Cook 1 minute more.
- Serve with sour cream and salsa.
