Ingredients

  • 1.5 lbs (680g) Chicken tenderloins
  • 2 oz (60g) Pork rinds, crushed
  • 1/4 cup Parmesan, grated
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder
  • 2 Eggs, beaten
  • to taste Salt and pepper

Method

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  2. Mix crushed pork rinds, parmesan, paprika, garlic powder, salt and pepper.
  3. Dip chicken tenders in egg, then press into the pork rind mixture.
  4. Place on baking sheet. Spray lightly with cooking spray.
  5. Bake 18-20 minutes, flipping halfway, until golden and crispy.
