Ingredients
- 1.5 lbs (680g) Chicken tenderloins
- 2 oz (60g) Pork rinds, crushed
- 1/4 cup Parmesan, grated
- 1 tsp Paprika
- 1/2 tsp Garlic powder
- 2 Eggs, beaten
- to taste Salt and pepper
Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
- Mix crushed pork rinds, parmesan, paprika, garlic powder, salt and pepper.
- Dip chicken tenders in egg, then press into the pork rind mixture.
- Place on baking sheet. Spray lightly with cooking spray.
- Bake 18-20 minutes, flipping halfway, until golden and crispy.
