- 2 cups Almond flour
- 1/2 cup Butter, softened
- 1/2 cup Erythritol
- 1 large Egg
- 1 tsp Vanilla extract
- 1/2 cup Sugar-free chocolate chips
- 1/2 tsp Baking soda
- 1/4 tsp Salt
Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
- Cream butter and erythritol until fluffy. Beat in egg and vanilla.
- Mix in almond flour, baking soda, and salt.
- Fold in chocolate chips.
- Scoop rounded tablespoons onto the baking sheet. Flatten slightly. Bake 10-12 minutes until edges are golden.
