Ingredients

  • 2 tbsp Instant coffee granules
  • 2 tbsp Powdered allulose
  • 2 tbsp Hot water
  • 3/4 cup (175ml) Unsweetened almond milk
  • 2 tbsp (30ml) Heavy cream
  • 1 cup Ice cubes

Method

  1. Combine instant coffee, allulose, and hot water in a tall narrow bowl.
  2. Whip with a hand mixer (or vigorous whisk) for 2-3 minutes until the mixture is thick, glossy, and holds soft peaks — it will go from dark brown to a caramel color as it lightens.
  3. Fill a tall glass with ice. Pour in the almond milk and heavy cream.
  4. Spoon the whipped coffee on top in a tall mound — it floats.
  5. Stir before drinking, or sip straight through the foam for the dramatic layered effect.
