Ingredients
- 2 lbs (900g) Chicken drumsticks and thighs
- 1 cup (100g) Almond flour
- 1/2 cup Parmesan, grated
- 1 tbsp Paprika
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 2, beaten Eggs
- 2 cups Avocado oil (for frying)
- to taste Salt and pepper
Method
- Mix almond flour, parmesan, paprika, garlic powder, onion powder, salt, and pepper.
- Dip chicken in beaten eggs, then coat in flour mixture.
- Heat oil to 350°F (175°C). Fry chicken 6-8 minutes per side until golden and cooked through.
- Drain on paper towels. Rest 5 minutes before serving.
