Ingredients

  • 2 lbs (900g) Chicken drumsticks and thighs
  • 1 cup (100g) Almond flour
  • 1/2 cup Parmesan, grated
  • 1 tbsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 2, beaten Eggs
  • 2 cups Avocado oil (for frying)
  • to taste Salt and pepper

Method

  1. Mix almond flour, parmesan, paprika, garlic powder, onion powder, salt, and pepper.
  2. Dip chicken in beaten eggs, then coat in flour mixture.
  3. Heat oil to 350°F (175°C). Fry chicken 6-8 minutes per side until golden and cooked through.
  4. Drain on paper towels. Rest 5 minutes before serving.
