Ingredients

  • 1 1/2 cups (170g) Mozzarella, shredded
  • 2 tbsp Cream cheese
  • 1 cup (112g) Almond flour
  • 1 Large egg
  • 3 tbsp Butter, melted
  • 4 cloves Garlic, minced
  • 1/2 cup (56g) Mozzarella, shredded (topping)
  • 2 tbsp Fresh parsley, chopped
  • 1/4 tsp Salt

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Microwave 1 1/2 cups mozzarella with cream cheese in 30-second bursts until smooth.
  3. Knead in almond flour, egg, and salt until a uniform dough forms.
  4. Press dough into an oval about 1/2 inch thick on the parchment.
  5. Stir melted butter with minced garlic. Brush generously over the dough.
  6. Top with the remaining mozzarella. Bake 15-18 minutes until golden and bubbly.
  7. Sprinkle with parsley. Slice and serve hot.
