Ingredients

  • 1.5 cups Mozzarella, shredded
  • 2 oz (60g) Cream cheese
  • 3/4 cup Almond flour
  • 1 large Egg
  • 1 tsp Baking powder
  • 3 tbsp Butter, melted
  • 3 cloves Garlic, minced
  • 2 tbsp Fresh parsley, chopped
  • 2 tbsp Parmesan, grated
  • 1/2 tsp Salt

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Microwave mozzarella and cream cheese 60-90 seconds until fully melted, stirring once.
  3. Quickly mix in almond flour, egg, baking powder, and salt to form a dough.
  4. Divide dough into 12 equal pieces. Roll each into a 5-inch rope and tie into a knot.
  5. Place on baking sheet. Bake 10-12 minutes until golden.
  6. While knots bake, mix melted butter with garlic, parsley, and a pinch of salt.
  7. Brush hot knots with garlic butter and sprinkle with parmesan. Serve warm.
